  • 2 ripe bananas (mashed)

  • 1 cup rolled oats

  • ¼ cup mix-ins (choose one or combine):

    • Mini chocolate chips

    • Chopped nuts (e.g., walnuts, almonds)

    • Raisins or dried cranberries

    • Unsweetened shredded coconut

    • Peanut butter chips or cacao nibs

Optional Add-Ins:

  • ½ tsp cinnamon or vanilla extract

  • A pinch of salt for balance

  • 1 tbsp nut butter for richness


Instructions

Step 1: Preheat & Prep

  1. Preheat oven to 350°F (175°C).

  2. Line a baking sheet with parchment paper or a silicone mat.

Step 2: Mix the Dough

  1. In a bowl, mash bananas until smooth.

  2. Stir in oats and your chosen mix-in.

  3. If using cinnamon, salt, or nut butter, stir that in too.

  4. Let the mixture rest for 5 minutes so the oats soften.

Step 3: Form the Cookies

  1. Scoop tablespoon-sized amounts onto the baking sheet.

  2. Flatten slightly with the back of a spoon (they won’t spread much).

  3. Leave a little space between each cookie.

Step 4: Bake

  1. Bake for 12–15 minutes, or until the edges are golden and the tops are firm.

  2. Let cool for 5 minutes on the pan, then transfer to a wire rack.

Step 5: Enjoy or Store

 

  1. Enjoy warm, or cool completely and store in an airtight container.

  2. Great for on-the-go snacks, lunchboxes, or a guilt-free dessert.

Notes

Use Ripe Bananas – The riper, the sweeter and more flavorful.
Don’t Overbake – They’ll stay soft and chewy when done right.
