For the Tomatoes:

  • 2 large green tomatoes, sliced ¼-inch thick

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp smoked paprika (optional)

For the Breading:

  • ½ cup all-purpose flour

  • 2 large eggs

  • 1 tbsp milk or water (to thin the eggs slightly)

  • 1 cup panko breadcrumbs

  • ¼ cup cornmeal (adds extra crunch)

  • ¼ cup grated Parmesan cheese (optional for flavor)

  • Ranch dressing

  • Remoulade sauce

  • Hot sauce or spicy mayo

  • Fresh herbs for garnish


Instructions

Step 1: Prep the Tomatoes

  1. Slice green tomatoes into ¼-inch thick rounds.

  2. Lay slices on a paper towel, sprinkle with salt, and let sit for 10 minutes to draw out excess moisture.

  3. Pat dry with additional paper towels.

Step 2: Set Up Breading Station

  1. In one bowl: Add flour and mix in garlic powder, black pepper, and paprika.

  2. In a second bowl: Whisk eggs and milk together.

  3. In a third bowl: Combine panko breadcrumbs, cornmeal, and Parmesan (if using).

Step 3: Bread the Tomato Slices

  1. Dip each tomato slice in flour, coating both sides.

  2. Next, dip into the egg mixture.

  3. Finally, coat with the breadcrumb-cornmeal mixture, pressing lightly to help it stick.

  4. Repeat for all slices and place them on a plate.

Step 4: Air Fry the Tomatoes

  1. Preheat air fryer to 400°F (200°C) for 3–5 minutes.

  2. Spray air fryer basket with cooking spray.

  3. Arrange tomatoes in a single layer (work in batches if needed).

  4. Lightly spray the tops of the tomatoes with oil.

  5. Air fry for 8–10 minutes, flipping halfway through, until golden and crisp.

Step 5: Serve Hot and Crispy

  1. Transfer to a serving plate and sprinkle with a pinch of sea salt or herbs.

  2. Serve immediately with your favorite dipping sauce.
