Ingredients

  • 4 medium russet or Yukon gold potatoes
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional for extra flavor)
  • ½ teaspoon dried thyme or rosemary
  • ¼ cup Parmesan cheese (optional, for extra crispiness)
  • Fresh parsley, for garnish

 

  • Sour cream or Greek yogurt (for serving, optional)

Instructions

Step 1: Prep the Potatoes

  1. Wash and dry the potatoes. Leave the skin on for extra crispiness!
  2. Place a potato between two wooden spoons or chopsticks. This prevents slicing all the way through.
  3. Using a sharp knife, make thin, even cuts about ⅛-inch apart, stopping before the bottom so the potato stays intact.

Step 2: Season the Potatoes

  1. In a small bowl, mix melted butter, olive oil, minced garlic, salt, black pepper, paprika, and thyme.
  2. Using a pastry brush, coat the potatoes with the mixture, making sure to get between the slices.

Step 3: Air Fry the Potatoes

  1. Preheat the air fryer to 375°F (190°C).
  2. Place the potatoes in the air fryer basket, making sure they aren’t touching.
  3. Air fry for 20 minutes, then brush with more butter mixture.
  4. Continue air frying for 5-10 more minutes until crispy and golden brown.

Step 4: Add the Final Touches

  1. Sprinkle with Parmesan cheese (if using) and air fry for 2 more minutes until melted.
  2. Garnish with fresh parsley and serve with sour cream or Greek yogurt.

Notes

Use Even-Sized Potatoes – This ensures they cook evenly.
Don’t Cut All the Way Through – Use chopsticks as a guide to keep the slices intact.
Get Between the Slices – Brush butter between cuts for maximum flavor.
Cook Time Varies – Adjust based on potato size and air fryer model.
