Ingredients

Scale
  • 2 medium baking apples (peeled and chopped)
  • 1/2 cup light brown sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 large egg (room temperature)
  • 1/3 cup white granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup full-fat sour cream (room temperature)
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, toss chopped apples with brown sugar, cinnamon, and ginger until coated.
  3. In another bowl, whisk the egg until frothy. Add granulated sugar and oil; mix well. Stir in sour cream and vanilla until smooth.
  4. In a separate bowl, combine flour, baking soda, and salt; whisk together.
  5. Gradually add dry ingredients to wet mixture, stirring gently until just combined.
  6. Fold in the apple mixture carefully.
  7. Pour batter into a greased loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  8. Let cool for about 10 minutes before transferring to a cooling rack. Prepare the glaze by mixing sifted powdered sugar, vanilla extract, and milk until smooth; drizzle over cooled bread.
