  • 1 1/3 cup oat flour (gluten-free) or gluten-free all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • pinch of cloves
  • 1/2 cup melted butter or coconut oil
  • 1/2 cup brown sugar
  • 1/3 cup applesauce
  • 1/2 cup apple cider
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup softened butter for frosting
  • 12 tbsp water, milk or more apple cider for frosting
  • 1 tsp vanilla for frosting
  • 1/2 tsp cinnamon for frosting
  • pinch of nutmeg for frosting
  • 2 cups powdered sugar for frosting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together oat flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves.
  3. In another bowl, mix melted butter (or coconut oil), brown sugar, applesauce, apple cider, vanilla extract, and eggs until smooth.
  4. Gradually combine the dry ingredients into the wet mixture until just blended.
  5. Fill each cupcake liner two-thirds full with batter and bake for 20-22 minutes or until a toothpick comes out clean.
  6. Cool cupcakes before frosting them with spiced buttercream made from softened butter, powdered sugar, water/milk/apple cider, vanilla extract, cinnamon, and nutmeg.
