Ingredients
- 1 1/3 cup oat flour (gluten-free) or gluten-free all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp allspice
- pinch of cloves
- 1/2 cup melted butter or coconut oil
- 1/2 cup brown sugar
- 1/3 cup applesauce
- 1/2 cup apple cider
- 1 tsp vanilla
- 2 eggs
- 1/2 cup softened butter for frosting
- 1–2 tbsp water, milk or more apple cider for frosting
- 1 tsp vanilla for frosting
- 1/2 tsp cinnamon for frosting
- pinch of nutmeg for frosting
- 2 cups powdered sugar for frosting
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In one bowl, whisk together oat flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves.
- In another bowl, mix melted butter (or coconut oil), brown sugar, applesauce, apple cider, vanilla extract, and eggs until smooth.
- Gradually combine the dry ingredients into the wet mixture until just blended.
- Fill each cupcake liner two-thirds full with batter and bake for 20-22 minutes or until a toothpick comes out clean.
- Cool cupcakes before frosting them with spiced buttercream made from softened butter, powdered sugar, water/milk/apple cider, vanilla extract, cinnamon, and nutmeg.
