- 1–½ cups fresh apple cider
- 4 tablespoons cold unsalted butter, diced
- 2 large eggs
- 1/3 cup granulated sugar
- ½ cup lightly packed brown sugar
- 1/3 cup light olive oil
- ¼ cup sour cream
- 1–½ teaspoons baking powder
- ½ teaspoon baking soda
- 1–½ teaspoons ground cinnamon
- Pinch allspice
- 1/4 teaspoon coarse kosher salt
- 1–¾ cups all-purpose flour
Instructions
- Preheat your oven to 350°F and prepare a 9-inch square baking dish by buttering it or lining it with parchment paper.
- In a large sauté pan, bring fresh apple cider to a boil and reduce by half over about 5 minutes. Measure out ¾ cup of reduced cider and whisk in diced butter until melted.
- In a medium mixing bowl, combine eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt. Add the boiled cider mixture while whisking continuously.
- Gently fold in flour until just combined; do not overmix.
- Pour batter into the prepared dish and bake for 22 to 25 minutes until golden brown.
- Cool for about 5 minutes before topping with melted butter followed by cinnamon sugar.
