  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F and prepare a 9-inch square baking dish by buttering it or lining it with parchment paper.
  2. In a large sauté pan, bring fresh apple cider to a boil and reduce by half over about 5 minutes. Measure out ¾ cup of reduced cider and whisk in diced butter until melted.
  3. In a medium mixing bowl, combine eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt. Add the boiled cider mixture while whisking continuously.
  4. Gently fold in flour until just combined; do not overmix.
  5. Pour batter into the prepared dish and bake for 22 to 25 minutes until golden brown.
  6. Cool for about 5 minutes before topping with melted butter followed by cinnamon sugar.
