  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain Greek yogurt
  • 1/4 cup milk (dairy or plant-based)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 cups white whole wheat flour
  • 1 large baking apple (chopped)

Instructions

  1. Preheat the oven to 350°F (175°C) and spray muffin pans with cooking spray.
  2. Melt the butter in a large bowl.
  3. Whisk together honey or maple syrup, applesauce, Greek yogurt, milk, eggs, and vanilla into the melted butter.
  4. Add baking soda, baking powder, salt, and cinnamon; whisk until combined.
  5. Stir in white whole wheat flour until nearly mixed; avoid overmixing.
