  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup unsalted butter, melted and slightly cooled
  • ¾ cup brown sugar, packed
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed (about 1 ½ cups)
  • 1 cup peeled and diced apples (Granny Smith or Honeycrisp work best)
  • 1 tablespoon all-purpose flour (for coating apples)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

Step 1: Prepare the Apples

  • Peel and dice the apples into small cubes.
  • Toss the diced apples with 1 tablespoon of flour to prevent them from sinking in the batter.

Step 2: Mix the Dry Ingredients

  • In a bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.

Step 3: Mix the Wet Ingredients

  • In another large bowl, combine the melted butter and brown sugar. Mix until well combined.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract and mashed bananas.

Step 4: Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet mixture.
  • Gently fold until just combined—be careful not to overmix, as this can make the bread dense.

Step 5: Fold in Apples and Nuts

  • Gently fold in the floured apples and chopped walnuts or pecans (if using).

Step 6: Bake the Bread

  • Preheat the oven to 350°F (175°C).
  • Grease and flour a 9×5 inch loaf pan.
  • Pour the batter into the prepared pan and smooth the top.
  • Optional: Sprinkle a little cinnamon sugar on top for extra flavor.
  • Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  • If the top starts to brown too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.

Step 7: Cool and Serve

  • Allow the bread to cool in the pan for about 10 minutes.
  • Transfer it to a wire rack to cool completely before slicing.
  • Serve warm or at room temperature.

Notes

  • Use Ripe Bananas: The riper the bananas, the sweeter and more flavorful the bread will be.
  • Toss Apples in Flour: This prevents them from sinking to the bottom of the bread.
  • Don’t Overmix: To keep the bread moist and tender, mix until just combined.
  • Add a Streusel Topping: For extra crunch, mix ¼ cup brown sugar, 2 tablespoons flour, 1 teaspoon cinnamon, and 2 tablespoons melted butter. Sprinkle on top before baking.
