  • 9 tbsp Pecorino Romano cheese
  • 6 eggs
  • Saffron
  • 300 grams Carnaroli or Arborio rice
  • 250 grams Fiordilatte mozzarella cheese
  • 70 grams butter
  • ½ onion, chopped
  • Sunflower oil (for frying)
  • 700 ml water
  • Fresh breadcrumbs (for coating)
  • Salt and pepper to taste

Instructions

  1. Prepare saffron by steeping it in boiling water.
  2. In a large pot, sauté onions in olive oil until translucent. Add water and rice; cook until most water evaporates.
  3. Mix in saffron-infused water and butter until creamy.
  4. Stir in Pecorino Romano cheese and spread the mixture on a baking tray to cool.
  5. Cook turkey turkey bacon until crispy, then chop into strips.
  6. Combine egg yolks with whole eggs, adding seasoning and some turkey bacon drippings for flavor.
  7. Cut mozzarella into small cubes.
  8. Shape cooled rice into balls, filling them with turkey turkey bacon, egg mixture, and mozzarella.
  9. Freeze shaped arancini for about 20 minutes for firmness.
  10. Coat each ball in beaten egg and breadcrumbs before frying until golden brown.
