- 6 eggs
- Saffron
- 300 grams Carnaroli or Arborio rice
- 250 grams Fiordilatte mozzarella cheese
- 70 grams butter
- ½ onion, chopped
- Sunflower oil (for frying)
- 700 ml water
- Fresh breadcrumbs (for coating)
- Salt and pepper to taste
Instructions
- Prepare saffron by steeping it in boiling water.
- In a large pot, sauté onions in olive oil until translucent. Add water and rice; cook until most water evaporates.
- Mix in saffron-infused water and butter until creamy.
- Stir in Pecorino Romano cheese and spread the mixture on a baking tray to cool.
- Cook turkey turkey bacon until crispy, then chop into strips.
- Combine egg yolks with whole eggs, adding seasoning and some turkey bacon drippings for flavor.
- Cut mozzarella into small cubes.
- Shape cooled rice into balls, filling them with turkey turkey bacon, egg mixture, and mozzarella.
