Ingredients

2 large cucumbers, thinly sliced
1/4 cup red onion, thinly sliced (optional)

3 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon honey or sugar (optional, for sweetness)
1 garlic clove, minced
1 teaspoon freshly grated ginger
1/2 teaspoon red pepper flakes (optional, for heat)
Instructions
Step 1: Prepare the Cucumbers
- Wash and peel the cucumbers (or leave the skin on for extra texture).
- Slice the cucumbers thinly, either by hand or using a mandoline for uniform slices.
- If you prefer, you can sprinkle the cucumber slices with a pinch of salt and let them sit for 10 minutes to draw out excess water. Afterward, blot them dry with a paper towel.
Step 2: Make the Dressing
- In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey or sugar (if using), garlic, ginger, and red pepper flakes. Taste and adjust the seasoning if needed.
Step 3: Toss the Salad
- In a large mixing bowl, combine the sliced cucumbers, red onion (if using), and cilantro.
- Pour the dressing over the cucumbers and toss everything together until the cucumbers are well-coated.
Step 4: Garnish & Serve
- Garnish the salad with sesame seeds for added crunch and texture.

Use English cucumbers – They have fewer seeds and thinner skin, making them perfect for salads.
