Ingredients
-
1 sheet puff pastry, thawed

1 bunch asparagus, trimmed (about 1 lb)
-
½ cup ricotta cheese or cream cheese
-
¼ cup grated Parmesan cheese
-
½ tsp garlic powder
-
½ tsp lemon zest
-
Salt and pepper, to taste
-
1 tbsp olive oil
-
1 egg (for egg wash)
-
Optional: red pepper flakes, crumbled feta, or fresh herbs
Instructions
Step 1: Prep the Puff Pastry
-
Preheat oven to 400°F (200°C).
-
Line a baking sheet with parchment paper.
-
Roll out the puff pastry slightly and cut into 4 equal rectangles.
-
Lightly score a ½-inch border around each tart (don’t cut all the way through).
-
Prick the center of each tart with a fork to prevent puffing.
Step 2: Make the Cheese Filling
-
In a bowl, mix ricotta (or cream cheese), Parmesan, garlic powder, lemon zest, salt, and pepper.
-
Spread the mixture inside the scored border of each puff pastry piece.
Step 3: Add Asparagus
-
Toss asparagus in olive oil, salt, and pepper.
-
Arrange 4–5 trimmed asparagus spears on top of each tart.
-
Optional: sprinkle with a bit more Parmesan or red pepper flakes.
Step 4: Egg Wash & Bake
-
Beat the egg and brush it along the outer pastry borders.
-
Bake tarts for 18–20 minutes, or until golden brown and puffed.
-
Let cool slightly before serving.
Step 5: Garnish and Serve
-
Garnish with crumbled feta, lemon zest, or fresh herbs like thyme or chives.
-
Serve warm or at room temperature.
Notes
Thaw Puff Pastry Properly – Cold but pliable is ideal for easy handling.
Trim Asparagus Evenly – For a uniform look and even cooking.
Use Full-Fat Cheese – Ricotta or cream cheese provides creaminess and richness.
Score Borders Gently – Creates that beautiful raised crust effect.
Bake Until Deeply Golden – For best texture and flavor.
