- 1 tsp vanilla extract
- 2/3 cup whole milk
- 1/4 cup unsalted butter (melted)
- 2 tsp apple cider vinegar
- 1 medium apple (diced)
- Vegetable oil for muffin pan
- 1 cup powdered sugar
Instructions
- Preheat your oven to 375°F (190°C) and coat muffin cups with vegetable oil.
- Dice the apple into ½ inch pieces and set aside.
- In a bowl, mix flour, baking powder, baking soda, salt, sugar, cinnamon, and nutmeg.
- Make a well in the dry ingredients; add eggs, milk, and vanilla. Whisk until smooth.
- Stir in melted butter until combined.
- Heat the muffin pan in the oven for about 5 minutes.
- Mix diced apples and vinegar into the batter before filling muffin tins halfway.
- Bake for 18–20 minutes until golden brown and a cake tester comes out clean.
- Cool slightly on a wire rack before glazing with powdered sugar mixed with milk.
