Description

  • 1 1/3 cup all-purpose flour
  • 1 ½ tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp kosher salt
  • ½ cup granulated sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2/3 cup whole milk
  • 1/4 cup unsalted butter (melted)
  • 2 tsp apple cider vinegar
  • 1 medium apple (diced)
  • Vegetable oil for muffin pan
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and coat muffin cups with vegetable oil.
  2. Dice the apple into ½ inch pieces and set aside.
  3. In a bowl, mix flour, baking powder, baking soda, salt, sugar, cinnamon, and nutmeg.
  4. Make a well in the dry ingredients; add eggs, milk, and vanilla. Whisk until smooth.
  5. Stir in melted butter until combined.
  6. Heat the muffin pan in the oven for about 5 minutes.
  7. Mix diced apples and vinegar into the batter before filling muffin tins halfway.
  8. Bake for 18–20 minutes until golden brown and a cake tester comes out clean.
  9. Cool slightly on a wire rack before glazing with powdered sugar mixed with milk.
