Ingredients

  • 1 cup all-purpose flour

  • ½ cup whole wheat flour (or more all-purpose flour)

  • 1½ tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

  • ½ tsp cinnamon (optional)

  • ½ cup sugar

  • 1 cup plain Greek yogurt (full-fat or 2%)

  • 1 large egg

  • 1½ tsp vanilla extract

  • 1 tbsp lemon zest (about 1 lemon)

  • 1 cup fresh blueberries

For the Light Glaze (Optional):

  • ¾ cup powdered sugar

  • 23 tbsp milk or lemon juice

Optional Add-ins:

  • 1 tbsp honey for extra sweetness

  • A sprinkle of nutmeg for warmth

  • Extra lemon zest on top after glazing


Instructions

Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper.

Step 2: Mix Dry Ingredients
In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and cinnamon.

Step 3: Mix Wet Ingredients
In a large bowl, whisk together the Greek yogurt, sugar, egg, vanilla extract, and lemon zest until smooth.

Step 4: Combine Wet and Dry
Gradually add the dry ingredients to the wet ingredients, mixing gently just until combined.
Carefully fold in the blueberries.
The batter will be thick—this is perfect for scooping!

Step 5: Scoop and Bake
Using a cookie scoop or spoon, drop mounds of batter onto the prepared baking sheet, spacing them a couple of inches apart.
Bake for 12–15 minutes, or until the fritters are golden on the edges and a toothpick inserted in the center comes out clean.

Step 6: Cool and Glaze (Optional)
Let the fritters cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
If glazing, whisk together powdered sugar and milk or lemon juice to form a thin glaze.
Drizzle the glaze over the cooled fritters.

Step 7: Serve
Enjoy fresh and warm, or at room temperature with your favorite cup of coffee or tea!

Use Fresh Blueberries – They hold up better while baking.
