Ingredients
For the Cabbage Nests:

For the Burger Patties:

Instructions
Step 1: Prepare the Cabbage Nests
Preheat oven to 400°F (200°C).
Slice the cabbage into ½ to ¾-inch thick rounds (aim for 4 to 6 large slices).
Place the rounds flat on a parchment-lined baking sheet.
Brush both sides lightly with olive oil and season with salt, pepper, garlic powder, and smoked paprika.
Roast for 20 minutes, flip carefully, then roast for another 10–15 minutes until tender with crispy edges.
Step 2: Make the Burger Patties
In a large bowl, combine ground beef, grated onion, garlic, Dijon mustard, Worcestershire sauce, salt, pepper, and herbs.
Mix gently until just combined—don’t overwork the meat.
Form into 4–6 equal-sized patties, slightly smaller than the cabbage rounds.
Step 3: Bake the Patties
Once the cabbage has finished roasting, remove the tray from the oven.
Place one burger patty directly on top of each cabbage nest.
Return to the oven and bake for 15–18 minutes, or until patties are fully cooked (internal temp should reach 160°F).
Add sliced cheese during the last 3 minutes of baking, if using.
Step 4: Assemble & Serve
Top each burger with your favorite toppings: tomato, avocado, pickles, or sauce.
