Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper and lightly spray with olive oil.
Step 2: Mix the Ingredients
In a large bowl, combine ground chicken, ricotta cheese, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, pepper, and parsley.
Mix gently with a spoon or your hands until just combined—don’t overmix.
Step 3: Form the Meatballs
Use a cookie scoop or spoon to form meatballs about 1½ inches in diameter.
Place them evenly spaced on the prepared baking sheet.
Step 4: Bake
Lightly spray the tops of the meatballs with olive oil.
Bake for 18–20 minutes, or until golden and cooked through (internal temperature should reach 165°F).
Step 5: Garnish and Serve
Sprinkle with extra parsley and serve warm with your favorite marinara sauce, over pasta, or as a protein-packed snack.
