Ingredients

  • ⅓ cup crumbled feta cheese (block-style feta preferred for best texture)

  • 2 large eggs

  • 1 tbsp olive oil

  • ½ tsp garlic powder

  • ¼ tsp black pepper

  • ¼ tsp crushed red pepper flakes (optional)

  • Fresh herbs (parsley, basil, or dill) for garnish

  • Toasted bread or pita for serving

Optional Add-ins:

  • ½ cup cherry tomatoes, halved

  • A handful of baby spinach

  • 1 tbsp chopped sun-dried tomatoes

  • A few olives, sliced


Instructions

Step 1: Preheat the Oven
Preheat your oven (or toaster oven) to 375°F (190°C).

Step 2: Assemble the Base
In a small baking dish or ramekin, add olive oil and swirl to coat the bottom.
Sprinkle in the crumbled feta cheese evenly.
Add optional veggies like cherry tomatoes or spinach, if using.
Sprinkle with garlic powder, black pepper, and red pepper flakes.

Step 3: Bake the Feta
Place the dish in the preheated oven and bake for 6–8 minutes, until the feta is warm and starting to soften.

Step 4: Add the Eggs
Remove the dish and carefully crack the eggs over the feta mixture.
Return to the oven and bake for another 8–10 minutes, or until the whites are set but yolks are still slightly runny (or longer if you prefer firmer yolks).

Step 5: Finish & Serve
Garnish with fresh herbs, an extra drizzle of olive oil, and more pepper if desired.
Serve immediately with crusty bread, pita, or over sautéed greens.

Notes

Use Block Feta – It melts creamier and less crumbly than pre-crumbled versions.
Bake in Layers – Warming the feta before adding eggs helps avoid overcooked whites.
Add Veggies Early – Tomatoes and spinach cook best when added with the feta.
