  • ½ cup breadcrumbs (or almond flour for a gluten-free option)
  • 1 egg – Helps bind the mixture together.
  • 2 tablespoons fresh parsley, chopped – Adds freshness.
  • 1 tablespoon Dijon mustard – Enhances flavor.
  • 2 cloves garlic, minced – Boosts taste.
  • ½ teaspoon salt – For seasoning.
  • ½ teaspoon black pepper – Adds a mild spice.
  • ½ teaspoon paprika – Gives a subtle smokiness.
  • 1 tablespoon lemon juice – Brightens the flavor.
  • 1 tablespoon olive oil – Helps keep the meatballs moist.

For the Creamy Avocado Sauce:

  • 1 ripe avocado – The base of the sauce.
  • ¼ cup Greek yogurt – Adds creaminess and a tangy flavor.
  • 1 tablespoon lemon juice – Keeps the sauce fresh and zesty.
  • 1 garlic clove – Adds a mild kick.
  • ¼ teaspoon salt – Enhances the flavor.
  • 2 tablespoons olive oil – For a smooth texture.
  • 2 tablespoons water – Adjust to desired consistency.
  • 1 tablespoon fresh cilantro or parsley – Optional, for extra freshness.

Instructions

Step 1: Prepare the Salmon Meatballs

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the finely chopped salmon, breadcrumbs, egg, parsley, Dijon mustard, garlic, salt, black pepper, paprika, lemon juice, and olive oil.
  3. Mix well until all ingredients are fully incorporated.
  4. Using your hands or a scoop, shape the mixture into small meatballs (about 1 inch in diameter) and place them on the baking sheet.

Step 2: Bake the Meatballs

  1. Bake for 12-15 minutes, or until the meatballs are firm and slightly golden on top.
  2. Remove from the oven and let them rest for a few minutes before serving.

Step 3: Make the Creamy Avocado Sauce

  1. In a food processor, blend the avocado, Greek yogurt, lemon juice, garlic, salt, olive oil, and water until smooth.
  2. Adjust the consistency by adding more water if needed.
  3. Stir in chopped cilantro or parsley for extra flavor.

Step 4: Serve and Enjoy

  1. Drizzle the creamy avocado sauce over the salmon meatballs or serve it on the side as a dip.
  2. Garnish with extra parsley and a squeeze of lemon for added freshness.

Notes

  • Use Fresh Salmon – It gives the best texture and flavor.
  • Don’t Overmix – Gently combine the ingredients to keep the meatballs tender.
  • Make it Spicy – Add a pinch of red pepper flakes for some heat.
  • Dairy-Free Option – Replace Greek yogurt with coconut yogurt in the sauce.
