  • 1 pound large raw shrimp (peeled, deveined)
  • 1 tablespoon garlic (minced)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons chicken stock (divided)
  • 2 tablespoons lemon juice (divided)
  • ¼ cup unsalted butter (cubed, divided)
  • 2 tablespoons parsley (minced for garnish)

Instructions

  1. Preheat your oven to 425°F.
  2. Lay out four pieces of heavy-duty aluminum foil (18 inches each).
  3. Divide asparagus among the foil packs.
  4. In a bowl, mix shrimp with garlic, salt, pepper, and red pepper flakes and toss well.
  5. Place shrimp mixture on top of the asparagus in each packet.
  6. Drizzle each with chicken stock and lemon juice; top with butter cubes.
  7. Seal the foil packets tightly and place on a baking sheet.
  8. Bake for 15-20 minutes until shrimp turn opaque pink.
  9. Carefully open packets and serve hot with lemon slices and parsley.
