Banana Pudding Cheesecake For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1/2 cup granulated sugar
  • 1 package banana pudding mix (instant)
  • 1/2 cup milk
  • 2 ripe bananas, sliced

For the Topping:

 

  • 1 1/2 cups heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Nilla wafers (for garnish)
  • Extra banana slices (for garnish)

Instructions

Step 1: Make the Crust In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until everything is well mixed. Press the mixture into the bottom of a 9-inch springform pan to form a firm crust. Place the crust in the fridge to set while you prepare the filling.

Step 2: Prepare the Cheesecake Filling In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Add the sour cream and vanilla extract, and continue to mix until combined. In a separate bowl, whisk together the instant banana pudding mix and milk until smooth and thickened. Add the banana pudding mixture to the cream cheese mixture and beat until well combined. In another bowl, whip the heavy whipping cream and granulated sugar until stiff peaks form. Gently fold the whipped cream into the cheesecake mixture until smooth.

Step 3: Assemble the Cheesecake Pour half of the cheesecake mixture onto the prepared crust and smooth it out with a spatula. Place a layer of sliced bananas over the cheesecake filling. Add the remaining cheesecake mixture on top and smooth it out again. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or overnight to allow it to set.

Step 4: Make the Topping Once the cheesecake has set, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream on top of the cheesecake. Garnish with Nilla wafers and extra banana slices.

 

Step 5: Serve and Enjoy Once the cheesecake is fully chilled and topped, carefully remove the sides of the springform pan. Slice and serve this decadent, creamy Banana Pudding Cheesecake to your family and friends!
