  • 1 pound shrimp (peeled, deveined, tail removed)
  • ½ cup buttermilk
  • 1 cup cornstarch
  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • ½ teaspoon Sriracha (or more to taste)
  • 1 tablespoon honey
  • Canola oil (for frying)

Instructions

  1. In a small bowl, mix mayonnaise, Thai sweet chili sauce, Sriracha, and honey until smooth. Set aside.
  2. Pour buttermilk over the shrimp in a separate bowl, ensuring each piece is coated.
  3. Place cornstarch in another bowl for coating the shrimp.
  4. Heat about 1 inch of canola oil in a heavy-bottom pot to 375°F using a candy thermometer.
  5. Remove shrimp from buttermilk, allowing excess to drip off. Coat each piece in cornstarch and fry in batches for 1-2 minutes until golden brown.
  6. While hot, toss fried shrimp with the prepared sauce before serving.
