Description

BBQ Chicken Roll Ups are a delicious and satisfying meal option perfect for any occasion, whether it’s a casual family dinner or a lively gathering with friends. These easy-to-make roll-ups feature tender chicken simmered in zesty BBQ sauce, wrapped in soft tortillas, and topped with gooey cheese for an irresistible crunch.


Ingredients

  • 24 chicken breasts
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tbsp ranch dressing seasoning
  • 1 tbsp minced garlic
  • 1 tbsp vinegar
  • BBQ sauce (to taste)
  • Flour tortillas
  • Shredded cheddar or mozzarella cheese
  • Oil for frying

Instructions

  1. Spray the inside of your slow cooker with cooking spray. Place the chicken breasts, minced garlic, vinegar, and seasonings into the slow cooker.
  2. Pour enough BBQ sauce over the chicken to coat it well.
  3. Cook on high for 4 hours or low for 6 hours until the chicken is tender and easily shredded.
  4. Shred the cooked chicken using tongs or forks and mix thoroughly. Add more BBQ sauce if desired.
  5. Fill each flour tortilla with shredded BBQ chicken and sprinkle generously with cheese before rolling tightly.
  6. Heat oil in a frying pan over medium heat and fry the roll-ups until golden brown on all sides. Drain excess oil on paper towels.
