- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon toasted sesame oil
- 2 tablespoons vegetable oil
- 8 ounces sirloin steak, cut into strips
- 1/2 cup diced onion
- 1 cup frozen peas and carrots
- 2 large eggs, lightly beaten
- 3 cups cooked and cooled rice
- Thinly sliced scallions (optional)
Instructions
- Prepare the sauce by mixing dark soy sauce, soy sauce, oyster sauce, and sesame oil in a small bowl. Set aside.
- In a skillet over medium-high heat, add a quarter of the vegetable oil. Sear the beef for about 3-5 minutes until charred; set aside.
- Add another quarter of the oil to the skillet and sauté onions for about 2 minutes until softened.
- Add peas and carrots; cook for about 3 minutes until slightly softened. Transfer to the plate with beef.
- Scramble the eggs in the remaining oil until fully cooked; add to beef and veggies.
- Add remaining oil and cooked rice; let sit for 2 minutes for char before mixing all ingredients together.
- Pour in the prepared sauce and stir well to combine; cook for an additional 3 minutes.
- Serve immediately, garnished with scallions if desired.
