  • 2 tablespoons dark soy sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon toasted sesame oil
  • 2 tablespoons vegetable oil
  • 8 ounces sirloin steak, cut into strips
  • 1/2 cup diced onion
  • 1 cup frozen peas and carrots
  • 2 large eggs, lightly beaten
  • 3 cups cooked and cooled rice
  • Thinly sliced scallions (optional)

Instructions

  1. Prepare the sauce by mixing dark soy sauce, soy sauce, oyster sauce, and sesame oil in a small bowl. Set aside.
  2. In a skillet over medium-high heat, add a quarter of the vegetable oil. Sear the beef for about 3-5 minutes until charred; set aside.
  3. Add another quarter of the oil to the skillet and sauté onions for about 2 minutes until softened.
  4. Add peas and carrots; cook for about 3 minutes until slightly softened. Transfer to the plate with beef.
  5. Scramble the eggs in the remaining oil until fully cooked; add to beef and veggies.
  6. Add remaining oil and cooked rice; let sit for 2 minutes for char before mixing all ingredients together.
  7. Pour in the prepared sauce and stir well to combine; cook for an additional 3 minutes.
  8. Serve immediately, garnished with scallions if desired.
