- 3 pounds chuck roast (diced)
- 1 yellow onion (diced)
- 3 celery stalks (diced)
- 3 carrots (diced)
- 2 russet potatoes (peeled and diced)
- 1 tablespoon minced garlic
- 4 tablespoons olive oil
- 1 teaspoon Worcestershire sauce
- 6 cups beef broth
- 2 tablespoons tomato paste
- Salt and pepper to taste
- 3 tablespoons cornstarch mixed with 3 tablespoons cold water
Instructions

- Heat olive oil in a Dutch oven over medium heat. Sear beef in batches until browned on all sides; set aside.
- Sauté onions, carrots, and celery in the same pot for about 4 minutes. Add minced garlic and cook for another minute.
- Stir in tomato paste, beef broth, and beef bouillon powder; bring to a simmer. Return seared beef to pot and cover; simmer on low for 1 hour.
- Add diced potatoes and carrots; cook for an additional 15–20 minutes until tender.
