  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted and cooled butter)
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In a large bowl, mix pumpkin puree, granulated sugar, and brown sugar until smooth. Beat in eggs, vegetable oil, and vanilla extract.
  4. Gradually add dry ingredients to wet mixture, stirring just until combined.
  5. In another bowl, beat cream cheese until smooth; mix in granulated sugar, egg yolk, and vanilla extract.
  6. Fill each muffin cup with batter about 3/4 full and top with cream cheese mixture. Use a toothpick to swirl gently.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
