For the Sandwiches:
- 24 Biscoff cookies (about 12 pairs)
- 2 cups vanilla ice cream (or any flavor of your choice)
For Garnish (optional):
- Crushed Biscoff cookies (for rolling the edges)
- Mini chocolate chips or sprinkles

Step 1: Soften the Ice Cream
- Let the vanilla ice cream sit out for about 5-10 minutes to soften slightly, making it easier to spread. You can speed up the process by microwaving it for about 10-15 seconds.
Step 2: Prepare the Cookies
- Lay out the Biscoff cookies on a tray or work surface. If you want uniform sandwiches, make sure you have pairs of cookies that are about the same size.
Step 3: Assemble the Sandwiches
- Take a spoonful of softened vanilla ice cream and place it on the bottom of one Biscoff cookie.
- Gently press a second cookie on top to form a sandwich. Be careful not to crush the cookies—just enough pressure to spread the ice cream to the edges.
- Repeat this process for all the cookies, making 12 sandwiches.
Step 4: Roll in Crushed Biscoff (Optional)
- If you like, roll the edges of each ice cream sandwich in crushed Biscoff cookies for an added crunch and extra flavor. You can also roll the edges in mini chocolate chips or sprinkles for a fun twist.
Step 5: Freeze the Sandwiches
- Place the assembled ice cream sandwiches back in the freezer for at least 2 hours, or until the ice cream is firm again. This helps the sandwiches hold their shape.
