Ingredients

For the Filling:
2 cups cooked shredded chicken (rotisserie works great)
1½ cups frozen mixed vegetables (carrots, peas, corn, green beans)
1 can (10.5 oz) cream of chicken soup
½ cup milk
½ tsp garlic powder
½ tsp onion powder
Salt and pepper, to taste

For the Bisquick Topping:
1 cup Bisquick baking mix
½ cup milk
1 egg

Optional Add-Ins:
½ cup shredded cheddar cheese (for a cheesy crust)
1 tbsp fresh parsley or thyme (for garnish)

Instructions

Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Lightly grease your baking dish with butter or non-stick spray.

Step 2: Mix the Filling
In a large bowl, combine shredded chicken, frozen vegetables, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
Stir until everything is evenly coated and well mixed.
Pour the mixture into the prepared baking dish and spread evenly.

Step 3: Make the Bisquick Topping
In a separate bowl, whisk together Bisquick mix, milk, and the egg until smooth.
Optional: Stir in shredded cheese for added flavor.

Step 4: Pour and Spread
Pour the Bisquick batter over the chicken filling.
Use a spoon or spatula to gently spread the batter evenly over the top.

Step 5: Bake Until Golden
Bake in the preheated oven for 30–35 minutes, or until the topping is golden brown and cooked through.
The filling should be bubbly and hot.

Step 6: Cool Slightly & Serve
Let the pot pie rest for 5 minutes before serving.
Garnish with chopped parsley or thyme if desired.

Notes

Use Rotisserie Chicken – A flavorful and time-saving shortcut.
Let It Rest – Allows the filling to set and makes serving easier.
Check the Center – Make sure the topping is cooked through in the middle.
Add Flavor – Mix herbs, cheese, or garlic into the Bisquick topping for variety.
Customize the Veggies – Use what you have on hand—broccoli, mushrooms, or spinach work great.
