  • 1 lb. Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning (divided)
  • Salt and pepper to taste

Instructions

  1. Pound chicken to an even thickness of 1/4 inch and rub with olive oil. Season both sides with 2–3 tablespoons of blackened seasoning.
  2. Heat skillet over medium-high heat and add 2 tablespoons of olive oil. Cook chicken for 3–4 minutes until dark amber on one side.
  3. Flip chicken and reduce heat to low. Add remaining butter and minced garlic; cook for about 5–6 minutes until the internal temperature reaches 165°F.
  4. Remove chicken from skillet and allow it to rest under foil.
  5. In the same skillet, melt remaining butter over medium heat, add garlic, sauté for 1–2 minutes until fragrant.
  6. Stir in heavy cream and remaining blackened seasoning; simmer for about 5 minutes until thickened.
  7. Cook noodles according to package instructions; reserve some pasta water before draining.
  8. Mix shredded parmesan into the sauce until melted; adjust seasonings as desired.
  9. Combine noodles with alfredo sauce, adding reserved pasta water if needed for consistency. Serve topped with sliced chicken.
