Instructions
Step 1: Prep the Oven & Pan
-
Preheat oven to 350°F (175°C).
-
Grease a 9×5-inch loaf pan or line it with parchment paper.
Step 2: Make the Cinnamon Swirl
-
In a small bowl, mix together ¼ cup brown sugar and 1 tsp cinnamon.
-
Set aside for layering.
Step 3: Mix the Banana Bread Batter
-
In a large bowl, whisk together mashed bananas, eggs, brown sugar, granulated sugar, oil, and vanilla extract until smooth.
-
In a separate bowl, combine flour, baking soda, baking powder, and salt.
-
Gradually stir the dry ingredients into the wet mixture until just combined—do not overmix.
-
Gently fold in the blueberries, being careful not to crush them.
Step 4: Layer the Batter & Swirl
-
Pour half of the batter into the prepared loaf pan.
-
Sprinkle half of the cinnamon sugar mixture over the batter.
-
Pour the remaining batter on top and finish with the rest of the cinnamon sugar.
-
Use a butter knife or skewer to gently swirl the layers for a marbled effect.
Step 5: Bake the Bread
-
Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
-
If the top browns too quickly, tent loosely with foil.
-
Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Step 6: Serve & Enjoy
-
Slice and serve warm or at room temperature.
-
Delicious with a pat of butter, a drizzle of glaze, or just as-is!
Notes
Use Overripe Bananas – The riper, the sweeter and more flavorful your bread will be.
Don’t Overmix – Stir until ingredients are just combined to keep the bread light.
Use Fresh or Frozen Berries – Just be sure not to thaw frozen berries to avoid excess moisture.
Test with a Toothpick – It’s the best way to check for doneness.
Cool Before Slicing – Letting it cool helps the bread set and makes slicing easier.
