Ingredients

1 cup old-fashioned rolled oats
½ tsp baking powder
½ tsp cinnamon
⅛ tsp salt
¾ cup cottage cheese (small curd preferred)
2 large eggs
⅓ cup maple syrup or honey
1 tsp vanilla extract
½ cup milk (any kind—dairy or plant-based)
1 cup fresh or frozen blueberries

Optional Toppings:
2 tbsp sliced almonds or chopped walnuts
1 tbsp turbinado sugar or brown sugar (for a sweet crunch)

Instructions

Step 1: Preheat Oven & Prepare Dish

  1. Preheat oven to 350°F (175°C).

  2. Lightly grease an 8×8-inch baking dish or line with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a large bowl, stir together oats, baking powder, cinnamon, and salt.

Step 3: Mix the Wet Ingredients

  1. In another bowl, whisk together cottage cheese, eggs, maple syrup, vanilla, and milk until smooth.

  2. Add the wet mixture to the dry ingredients and stir until well combined.

Step 4: Fold in the Blueberries

  1. Gently fold in the blueberries, being careful not to crush them.

  2. Pour the mixture into the prepared baking dish and spread evenly.

Step 5: Add Toppings and Bake

  1. Sprinkle with sliced almonds or nuts and a light dusting of turbinado sugar if desired.

  2. Bake for 35–40 minutes, or until the top is golden and the center is set.
