For the Biscuits:

  • 2 cups whole wheat flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • 2 tbsp cold unsalted butter, cubed

  • 1 cup plain Greek yogurt (high-protein)

  • ½ cup shredded cheddar cheese

For the Protein Filling:

  • 1 cup cooked beef breakfast sausage, crumbled

  • 4 large eggs

  • ¼ cup milk (any variety)

  • ¼ tsp salt

  • ¼ tsp pepper

  • ½ cup chopped baby spinach

  • ¼ cup diced red bell pepper

  • ¼ cup shredded mozzarella cheese (optional)


Instructions

Step 1: Make the Biscuit Dough

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. In a large bowl, combine flour, baking powder, baking soda, salt, pepper, and garlic powder.

  3. Cut in the cold butter using your fingers or a pastry cutter until the mix resembles coarse crumbs.

  4. Stir in shredded cheddar cheese.

  5. Add Greek yogurt and gently mix until a sticky dough forms. Do not overmix.

Step 2: Shape the Biscuits
6. Lightly flour your work surface and roll out the dough to about ¾-inch thick.
7. Use a biscuit cutter or round glass to cut out biscuits.
8. Place them on the prepared baking sheet, slightly spaced apart.

Step 3: Prepare the Filling
9. In a skillet, cook crumbled beef sausage until browned. Set aside.
10. In a bowl, whisk together eggs, milk, salt, and pepper.
11. Pour into the skillet and scramble until just set.
12. Stir in spinach, bell pepper, and sausage. Cook for another 1-2 minutes.
13. Remove from heat and mix in mozzarella, if using.

 

Step 4: Assemble and Bake
14. For sandwich-style biscuits, bake biscuits first for 15-18 minutes until golden.
15. Let them cool slightly, then slice in half and fill with the sausage-egg mix.
16. Or, press a thumbprint into the raw dough, fill with a spoonful of filling, and bake as filled biscuits.
17. Let rest for 5 minutes before serving.
