  • ½ cup chopped red onion
  • ½ cup chopped bell pepper
  • 4 large eggs
  • salt (to taste)
  • 1 tablespoon butter
  • 4 whole wheat English muffins
  • 4 slices sharp cheddar cheese
  • 4 slices cooked turkey turkey bacon
  • ¾ cup guacamole

Instructions

  1. Heat olive oil in a nonstick skillet over medium heat. Add red onion and bell pepper; cook until softened (about 3 minutes). Transfer to a bowl and set aside.
  2. In a mixing bowl, whisk eggs with salt. Melt butter in the same skillet over medium-low heat, pour in eggs, and scatter cooked veggies on top.
  3. Cook until edges begin to set (about 1 minute), then gently lift edges with a spatula, tilting the pan so uncooked egg flows underneath. Continue until no liquid remains on top.
  4. Reduce heat to low; cover if needed until mostly set. Fold omelet into thirds and cut into four pieces.
  5. Toast English muffins until golden brown. Assemble sandwiches with cheese, omelet piece, half slice of turkey turkey bacon, and guacamole.
