Ingredients

• 4 tostada shells (store-bought or homemade)
• 6 large eggs
• ½ cup milk (dairy or non-dairy)
• 1 tbsp butter or oil (for cooking eggs)
• 1 cup refried beans (black or pinto)
• 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
• 1 avocado, sliced or mashed
• ½ cup salsa or pico de gallo
• ¼ cup chopped fresh cilantro
• 2 green onions, sliced
• ½ tsp salt
• ¼ tsp black pepper
• Optional: jalapeño slices, lime wedges, sour cream, or hot sauce


Instructions

Step 1: Prepare the Tostadas
If using store-bought tostadas, set them aside.
To make your own, lightly brush corn tortillas with oil and bake at 400°F (200°C) for 8–10 minutes, flipping halfway until golden and crisp.

Step 2: Heat the Refried Beans
Warm the refried beans in a small saucepan or in the microwave until hot and smooth.
Keep them covered to retain heat.

Step 3: Scramble the Eggs
In a mixing bowl, whisk together eggs, milk, salt, and pepper.
Heat butter or oil in a skillet over medium heat.
Pour in the egg mixture and cook gently, stirring often, until soft and fluffy. Remove from heat.

Step 4: Assemble the Tostadas
Spread a generous layer of warm beans over each tostada shell.
Top with scrambled eggs, then sprinkle with shredded cheese while the eggs are still warm.

Step 5: Add Toppings
Top with avocado, spoonfuls of salsa or pico de gallo, and garnish with cilantro and green onions.
Optional toppings include jalapeños, lime wedges, hot sauce, or sour cream.

Step 6: Serve Immediately
Serve warm while the tostada shells are still crisp.
