  • 2 medium carrots (diced)
  • 3 cloves garlic (minced)
  • 4 cups chicken stock
  • ¼ cup cornstarch
  • 1 cup milk
  • 2 large potatoes (peeled and chopped into ½-inch cubes)
  • 16 ounces broccoli florets (fresh or frozen)
  • 1½ cups shredded sharp cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions

  1. In a skillet, melt butter over medium-high heat. Sauté diced onion until softened, about 3 minutes. Add diced carrots, salt, and pepper; cook for an additional 3–4 minutes. Stir in minced garlic and sauté for another 30 seconds.
  2. Add chopped potatoes and chicken stock to a large pot. Cover and bring to a simmer for about ten minutes.
  3. After ten minutes, add broccoli florets and continue simmering until both broccoli and potatoes are tender, about another ten minutes.
  4. In a small bowl, mix cornstarch with milk until smooth. Gradually stir this mixture into the hot soup while stirring continuously until thickened.
  5. Finally, incorporate shredded cheddar cheese into the soup, stirring until melted and well combined.
  6. Serve warm in bowls and enjoy!
