Ingredients

For the Brownie Crust:
½ cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
⅓ cup unsweetened cocoa powder
½ cup all-purpose flour
¼ tsp salt
¼ tsp baking powder

For the Cream Cheese Frosting:
8 oz cream cheese, softened
¼ cup powdered sugar
½ tsp vanilla extract
2–3 tbsp milk or cream (for spreadable consistency)

For the Fruit Topping (Choose your favorites):
Strawberries, sliced
Blueberries
Kiwi, peeled and sliced
Blackberries
Mandarin orange slices
Banana slices (add just before serving to prevent browning)
Grapes, halved
Mint leaves (optional for garnish)


Instructions

Step 1: Make the Brownie Crust

  1. Preheat oven to 350°F (175°C). Lightly grease a round pizza pan or line with parchment paper.

  2. In a large bowl, whisk together melted butter and sugar.

  3. Add eggs and vanilla, whisking until smooth.

  4. Stir in cocoa powder, flour, salt, and baking powder until combined.

  5. Spread the brownie batter evenly into the prepared pan.

  6. Bake for 18–20 minutes, or until the center is set and a toothpick comes out with a few moist crumbs.

  7. Remove from oven and let cool completely in the pan.

Step 2: Make the Cream Cheese Frosting
8. In a mixing bowl, beat the softened cream cheese until smooth.
9. Add powdered sugar and vanilla, and mix well.
10. Add milk 1 tbsp at a time until you reach a spreadable consistency.

Step 3: Assemble the Fruit Pizza
11. Once the brownie base is completely cool, spread the cream cheese frosting evenly over the top.
12. Arrange sliced fruit in a circular pattern or get creative with fun designs.
13. Add mint leaves for a fresh finish if desired.

Step 4: Chill & Serve
14. Refrigerate the brownie pizza for 30 minutes before serving to help set the frosting.
15. Slice like a pizza and serve chilled.
