- 2 medium-sized carrots, diced
- 2 medium-sized celery ribs, diced
- 2 cans (14oz each) butter beans, drained
- 1 cup water
- 2 cups low sodium vegetable broth
- 1 bay leaf
- Salt and black pepper to taste

- In a large heavy-based pot, heat olive oil over medium heat. Sauté the diced onion for about 3–5 minutes until soft. Add garlic, smoked paprika, Italian herb seasoning, dried thyme, and cayenne pepper; cook for another 30 seconds until fragrant.
- Stir in the diced carrots and celery. Meanwhile, blend 1½ cans of butter beans with water until smooth; then combine with remaining whole beans in the pot.
- Pour in vegetable broth, add bay leaf, salt, and black pepper. Bring to a simmer and cook for about 25 minutes until vegetables are tender.
- Taste and adjust seasoning as desired. Serve hot with a drizzle of olive oil.
