Ingredients

For the Dough:
4 cups all-purpose flour (plus more for dusting)
2 ¼ tsp active dry yeast (1 packet)
1 ½ tsp salt
2 tbsp sugar
1 cup warm buttermilk (not hot, about 100°F)
½ cup warm water
4 tbsp unsalted butter, melted and slightly cooled
1 large egg

For Topping:
2 tbsp melted butter (for brushing)
Sea salt flakes (optional)


Instructions

Step 1: Activate the Yeast
In a small bowl, combine warm water and sugar. Sprinkle yeast on top. Let sit for 5–10 minutes until foamy.

Step 2: Make the Dough
In a large mixing bowl or stand mixer, whisk together flour and salt.
Add in yeast mixture, warm buttermilk, egg, and melted butter.
Mix until a soft dough forms. Knead for 6–8 minutes until smooth and elastic.

Step 3: First Rise
Place dough in a lightly oiled bowl, cover with a towel or plastic wrap.
Let rise in a warm spot for 1–1.5 hours, or until doubled in size.

Step 4: Shape the Rolls
Punch down the dough and divide into 12 equal portions.
Roll each piece into a ball and place in a greased baking dish or sheet, spaced slightly apart.

Step 5: Second Rise
Cover again and let rise for 30–40 minutes, or until puffy.

Step 6: Bake the Rolls
Preheat oven to 375°F (190°C).
Brush tops with melted butter and sprinkle with sea salt flakes if desired.
Bake for 18–22 minutes or until golden brown on top.

 

Step 7: Cool & Serve
Remove from oven, brush with more butter, and let cool slightly before serving warm.

Notes

Use Fresh Yeast – Ensure it’s active by checking the foam during proofing.
Warm Buttermilk – Not hot, just warm to activate the yeast without killing it.
Don’t Over-Flour – Add just enough flour to prevent sticking, but keep dough soft.
Let It Rise Fully – A good rise ensures light, airy rolls.
Serve Warm – Best enjoyed fresh out of the oven or gently reheated.
