  • 16 ounces medium shell pasta

  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ⅛ teaspoon ground nutmeg
  • 1 cup low sodium vegetable broth
  • 1 cup milk
  • 4 ounces sharp white cheddar cheese (shredded)
  • 4 ounces sharp cheddar cheese (shredded)

Instructions

  1. Cook pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. Peel, seed, and cube butternut squash. Steam or boil until tender (10-15 minutes) and blend until smooth.
  3. In the same pot, melt butter over medium heat. Sauté minced garlic until fragrant, then stir in chopped sage if using.
  4. Whisk in flour to create a roux; cook for about a minute. Gradually add vegetable broth while whisking until thickened.
  5. Mix in milk, ground nutmeg, salt, and pepper. Remove from heat and stir in shredded cheeses until melted. Fold in pureed butternut squash.
