  • 16 oz frozen diced butternut squash
  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta
  • 1/3 cup reserved pasta water

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. On a baking sheet lined with parchment paper, spread the frozen butternut squash, chopped tomatoes, and sliced onion.
  3. Drizzle olive oil over the vegetables, then season with salt, black pepper, and dried thyme. Toss to coat evenly.
  4. Roast in the oven for about 20 minutes until tender and slightly caramelized.
  5. Cook your chosen pasta according to package instructions; reserve 1/3 cup of pasta water before draining.
  6. Blend the roasted vegetables with reserved pasta water until smooth.
  7. Combine the sauce with cooked pasta in a large bowl, tossing gently until coated.
  8. Serve hot with your choice of parmesan or plant-based parmesan.
