  • 1 bell pepper (sliced)
  • 2 cloves garlic (minced)
  • 1 tbsp Cajun seasoning
  • 1 cup stone-ground grits
  • 4 cups chicken broth
  • 1 cup shredded sharp cheddar cheese (optional)

Instructions

  1. In a medium saucepan, bring chicken broth to a boil. Gradually whisk in grits and salt; reduce heat and simmer for 20-25 minutes until creamy. Stir in butter and cheese if desired.
  2. Heat olive oil in a large skillet over medium-high heat. Season beef with salt and Cajun seasoning; sauté for 4-5 minutes until browned. Remove from skillet.
  3. In the same skillet, sauté onion, bell pepper, and garlic for 3-4 minutes until softened. Return beef to skillet; add broth and simmer for 2-3 minutes until sauce thickens.
  4. Serve grits topped with the beef mixture and garnish with fresh parsley or green onions.
