- 1 pound large shrimp (peeled and deveined)
- 2 tablespoons canola oil
- 1 large onion (diced)
- 1 tablespoon minced garlic
- ½ cup chopped celery sticks
- 1 red bell pepper (diced)
- 5 ears of corn (about 3 cups)
- 4–5 cups warm chicken stock
- 1 teaspoon smoked paprika
- 1 teaspoon white pepper
- 1 potato (about half pound)
- Fresh thyme and parsley for garnish
Instructions
- Prepare corn by removing husks and cutting kernels from cobs into a bowl; scrape residual juices from cobs.
- Season shrimp with Creole seasoning. In a Dutch oven, heat oil over medium heat and sauté shrimp for 3-5 minutes until cooked through; set aside.
- In the same pot, add onions, garlic, bay leaf, and thyme; sauté until fragrant. Add celery, bell pepper, smoked paprika, and more Creole seasoning; cook until softened.
- Stir in tomato paste, then pour in chicken stock, corn, white pepper, and diced potato; bring to a boil.
- Reduce heat to simmer for 20-30 minutes until potatoes are tender; return shrimp to pot during the last few minutes of cooking.
- Garnish with chopped parsley before serving hot.
