- 4 salmon fillets (approximately 6 oz each)
- 1 Tbsp olive oil (for salmon)
- ½ Tbsp olive oil (for grits)
- 2 jalapenos (diced)
- 1½ cups corn grits
- 3 cups low-sodium chicken stock
- 1 cup heavy cream
- 1½ cups shredded cheddar cheese
- Various spices: paprika, garlic powder, dried oregano, black pepper, onion powder, kosher salt, cayenne pepper
Instructions
- In a medium saucepan, heat ½ Tbsp olive oil over medium heat. Sauté diced jalapenos until softened.
