Ingredients

  • 4 salmon fillets (approximately 6 oz each)
  • 1 Tbsp olive oil (for salmon)
  • ½ Tbsp olive oil (for grits)
  • 2 jalapenos (diced)
  • 1½ cups corn grits
  • 3 cups low-sodium chicken stock
  • 1 cup heavy cream
  • 1½ cups shredded cheddar cheese
  • Various spices: paprika, garlic powder, dried oregano, black pepper, onion powder, kosher salt, cayenne pepper

Instructions

  1. In a medium saucepan, heat ½ Tbsp olive oil over medium heat. Sauté diced jalapenos until softened.
  2. Stir in corn grits, salt, chicken stock, and hot water. Bring to a boil and then reduce heat to low. Simmer for about 20 minutes until thickened. Stir in heavy cream and cheddar cheese until melted.
  3. Preheat your grill or grill pan over medium-high heat. Brush salmon fillets with olive oil and season generously with spices.
  4. Grill the salmon skin-side down for about 4–5 minutes per side or until cooked through.
  5. Serve grits on plates topped with grilled salmon and garnish with chopped green onions if desired.
