  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 1 pound colossal shrimp, peeled and deveined
  • 4 slices turkey turkey bacon, chopped
  • 2 stalks celery, diced
  • 1 yellow onion, diced
  • 1 large carrot, sliced
  • 4 garlic cloves, minced
  • 3 cups low-sodium chicken stock
  • 1/4 cup golden raisins
  • 1 can (29 oz) cannellini beans, drained and rinsed

Instructions

  1. In a mixing bowl, combine chili powder, garlic powder, smoked paprika, and olive oil. Whisk until blended.
  2. Toss the shrimp in the seasoning mixture until well coated.
  3. Heat a cast iron skillet over medium-high heat; add the seasoned shrimp and cook until just blackened (about 4-5 minutes). Remove from skillet.
  4. In the same skillet, cook chopped turkey turkey bacon until crispy. Add celery, onion, and carrot; sauté until softened (9-10 minutes).
  5. Stir in minced garlic; cook until fragrant (30 seconds). Add chicken stock, golden raisins, salt, and pepper; bring to boil.
  6. Stir in cannellini beans; reduce heat to simmer for 20-25 minutes until thickened.
  7. Top with cooked shrimp; garnish with parsley and serve with lemon wedges.
