- 1 pound colossal shrimp, peeled and deveined
- 4 slices turkey turkey bacon, chopped
- 2 stalks celery, diced
- 1 yellow onion, diced
- 1 large carrot, sliced
- 4 garlic cloves, minced
- 3 cups low-sodium chicken stock
- 1/4 cup golden raisins
- 1 can (29 oz) cannellini beans, drained and rinsed
Instructions
- In a mixing bowl, combine chili powder, garlic powder, smoked paprika, and olive oil. Whisk until blended.
- Toss the shrimp in the seasoning mixture until well coated.
- Heat a cast iron skillet over medium-high heat; add the seasoned shrimp and cook until just blackened (about 4-5 minutes). Remove from skillet.
- In the same skillet, cook chopped turkey turkey bacon until crispy. Add celery, onion, and carrot; sauté until softened (9-10 minutes).
