  • 1/2 cup unsalted butter, browned
  • 1/4 cup + 2 tablespoons granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup finely grated carrot (23 medium carrots)
  • 1/3 cup shredded sweetened coconut
  • For the Cream Cheese Buttercream: 1/2 cup unsalted butter, softened, 1/4 cup cream cheese, chilled, 2 1/2 cups powdered sugar, 1 teaspoon vanilla extract, 1 tablespoon heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together browned butter and sugars until smooth. Add in the egg and vanilla; mix well.
  3. In another bowl, whisk together flour, oats, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually combine dry ingredients with wet ingredients.
  4. Fold in grated carrots gently.
  5. Drop heaping tablespoons of dough onto the prepared baking sheet about two inches apart. Bake for about 10 minutes until golden brown around the edges. Cool on wire racks.
  6. For the cream cheese buttercream, beat softened butter and chilled cream cheese until smooth; gradually add powdered sugar and mix in vanilla extract until fluffy.
  7. Once cookies are cool, spread or pipe buttercream onto one cookie and top with another to form a sandwich.
