  • 1 1/3 cups light brown sugar

  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder

  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 2 cups grated carrots
  • For Cream Cheese Glaze: 4 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350ºF. Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, brown sugar, cinnamon, nutmeg, baking soda, baking powder, and salt.
  3. Add vegetable oil, eggs, and vanilla extract to the dry ingredients; whisk until smooth.
  4. Gently fold in grated carrots until evenly distributed.
  5. Fill muffin liners about two-thirds full with batter.
  6. Bake for about 20 minutes or until tops are golden brown and spring back when touched. Cool in the pan for 5 minutes before transferring to a cooling rack.
  7. To make the glaze, microwave softened cream cheese for about 30 seconds until warm. Stir in powdered sugar, vanilla extract, and milk until smooth.
  8. Dip the tops of each muffin into the glaze and return to the cooling rack.
