  • 1/2 cup light brown sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the melted butter, pumpkin puree, Greek yogurt, eggs, light brown sugar, maple syrup, and vanilla extract until smooth.
  3. In another bowl, combine the all-purpose flour, baking soda, baking powder, salt, and spices (cinnamon, cardamom, ginger, allspice, and cloves). Mix well.
  4. Gradually add the dry mixture to the wet mixture and stir gently until just combined; some lumps are acceptable.
  5. Pour the batter into the prepared loaf pan and bake for about 45 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow cooling in the pan for about 10 minutes before transferring to a wire rack to cool completely.
