Ingredients

  • 1 cup cottage cheese (small curd or blended smooth)

  • 1 cup shredded sharp cheddar cheese

  • 2 large eggs

  • ¼ cup milk (any kind)

  • 2 tbsp olive oil or melted butter

  • 1½ cups all-purpose flour

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ cup chopped fresh chives

Optional Add-ins:

  • ½ tsp garlic powder for extra flavor

  • ¼ cup cooked turkey bacon bits

  • A pinch of red pepper flakes for a little heat


Instructions

Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Line a muffin pan with paper liners or grease well with non-stick spray.

Step 2: Mix Wet Ingredients
In a large bowl, whisk together cottage cheese, eggs, milk, and olive oil until well combined.

Step 3: Add the Dry Ingredients
In another bowl, whisk together flour, baking powder, baking soda, salt, and pepper.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

Step 4: Add the Cheese and Chives
Fold in the shredded cheddar cheese and chopped chives.
Be careful not to overmix to keep the muffins fluffy.

Step 5: Fill the Muffin Pan
Spoon the batter evenly into the prepared muffin cups, filling each about ¾ full.

Step 6: Bake
Bake for 18–22 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

Step 7: Cool & Serve
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Enjoy warm or at room temperature.
