Ingredients

  • 1 ½ pounds ground chuck
  • 3 red bell peppers (chopped)
  • 1 sweet onion (chopped)
  • 2 poblano peppers (chopped and deseeded)
  • Few tablespoons avocado oil
  • 10 ounces heavy cream
  • 8 ounces white queso (cut into chunks)
  • 1 can of Rotel (8 ounces)
  • American cheese slices
  • Slider buns
  • Garlic aioli
  • Salt and pepper (to taste)
  • Your favorite beef rub

Instructions

  1. Form the ground chuck into a large patty slightly larger than your slider buns, season generously with beef rub, and refrigerate for 30 minutes.
  2. In a skillet over medium-high heat, sauté chopped red bell peppers, onion, and poblano peppers in avocado oil until softened. Set aside.
  3. In a saucepan, warm heavy cream over medium heat; whisk in queso until melted and smooth. Stir in Rotel, seasoning as needed.
  4. Cook the burger patty on medium-high heat for about 4-5 minutes per side; add sautéed veggies and American cheese to melt before removing from heat.
  5. Toast slider buns until golden brown and spread garlic aioli on each bottom bun.
  6. Assemble sliders by placing the cooked patty on the bun and drizzling with warm queso.
