  • ¾ cup chopped onion
  • ¾ cup shredded carrots
  • ¾ cup diced celery
  • 3 cups chicken broth
  • 4 cups diced peeled potatoes
  • 12 ounces pepper jack cheese (cubed)
  • 1½ cups milk
  • ¼ cup sour cream

Instructions

  1. In a large saucepan over medium-high heat, brown the ground beef until fully cooked; drain excess fat and set aside.
  2. In the same saucepan, melt 1 tablespoon of butter and sauté the onion, carrots, celery, basil, and parsley until tender (about 10 minutes). Add minced garlic and cook until fragrant (1 minute).
  3. Stir in chicken broth, diced potatoes, and browned beef. Bring to a boil, then reduce heat and simmer covered for 10–12 minutes until potatoes are tender.
  4. In a small skillet, melt remaining butter over medium heat. Whisk in flour and cook until bubbly (3–5 minutes). Add this roux to the soup and bring back to a boil.
  5. Reduce heat to low and stir in cubed cheese, milk, salt, and pepper until cheese melts completely. Blend in sour cream before serving.
