Ingredients

Scale
  • For the Garlic Butter Spread:

    • ½ cup unsalted butter (softened)
    • 3 cloves garlic (minced)
    • 1 tablespoon fresh parsley (chopped)
    • ½ teaspoon dried oregano
    • ½ teaspoon salt
  • For the Shrimp Filling:

    • ½ pound shrimp (peeled, deveined, and tails removed)
    • 2 cloves garlic (minced)
    • 1 tablespoon olive oil
    • ½ teaspoon red pepper flakes (optional, for a spicy kick)
    • Salt and black pepper to taste
    • Juice of half a lemon (for brightness)
  • For the Sandwich:

    • 8 slices of thick-cut Italian bread (or sourdough)
    • 1 cup shredded mozzarella cheese
    • 1 cup shredded provolone cheese
    • 1 tablespoon grated Parmesan (optional, for extra flavor)

Instructions

Step 1: Prepare the Garlic Butter Spread

  1. In a small mixing bowl, combine softened butter, minced garlic, chopped parsley, dried oregano, and salt.
  2. Mix well until all ingredients are evenly combined. Set aside.

Step 2: Cook the Garlic Shrimp

  1. In a skillet, heat olive oil over medium heat.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the shrimp, red pepper flakes (if using), salt, and pepper. Cook for 2-3 minutes per side until the shrimp are pink and fully cooked.
  4. Squeeze lemon juice over the shrimp for a burst of freshness.
  5. Remove from heat and set aside.

Step 3: Assemble the Sandwiches

  1. Spread the prepared garlic butter generously on one side of each slice of bread.
  2. Place the buttered side down on a cutting board.
  3. Layer shredded mozzarella and provolone on four slices of bread.
  4. Evenly distribute the cooked garlic shrimp on top of the cheese.
  5. Sprinkle with grated Parmesan for extra flavor.
  6. Top with another layer of shredded cheese.
  7. Place the remaining slices of bread on top, buttered side up.

Step 4: Grill the Sandwiches

  1. Heat a large skillet or griddle over medium heat.
  2. Place the assembled sandwiches in the skillet and cook until golden brown and crispy on one side (about 3-4 minutes).
  3. Carefully flip the sandwiches using a spatula and cook the other side until golden brown and the cheese is melted.
  4. Press gently with the spatula to help the cheese melt evenly.

Step 5: Serve and Enjoy

  1. Remove the sandwiches from the skillet and let them rest for 1-2 minutes before slicing.
  2. Cut each sandwich in half and serve hot.
  3. Enjoy the gooey, cheesy goodness with a side of marinara sauce for dipping or a fresh salad.

Notes

  • Use Fresh Garlic: Freshly minced garlic gives the garlic butter a more robust flavor.
  • Quality Bread Matters: Choose thick-cut Italian bread or sourdough for a sturdy, crispy base.
  • Don’t Overcook the Shrimp: Cook the shrimp just until pink to keep them juicy and tender.
  • Low and Slow: Cook the sandwiches on medium heat to allow the cheese to melt without burning the bread.
