- 1 cup jasmine rice
- 2 cups water
- ½ cup jalapeño (finely diced)
- 2 tbsp butter
- 3 cups shredded cheddar cheese
- ¾ cup milk
- Kosher salt

Instructions
- Rinse jasmine rice under cold water until clear. In a medium saucepan, combine rice and water; bring to boil over medium-high heat. Reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed.
- In another pan, melt butter over medium heat and sauté jalapeños for 3–5 minutes until tender.
- Lower heat to medium-low and add milk and half of the cheddar cheese along with seasonings. Stir until well combined and melted into a creamy sauce.
- Fluff cooked rice with a fork and mix it into the cheese sauce until evenly coated.
